Is the oil smoke from Chinese stir-frying too big? Is the 90% oil separation rate of Range Hood enough?

The wok smell and smoke of Chinese stir-frying are the soul of delicious food, but the instantaneous oil smoke also makes kitchen cleaning a problem. Faced with oil smoke emissions of up to 150m³ per minute, can the "90% oil separation rate" nominal parameter of the traditional Range Hood really cope with it?
What does a 90% oil separation rate mean?
According to the national standard GB/T17713, the oil separation rate refers to the efficiency of the range hood to separate and collect oil from the air. The value of 90% means that 10% of the oil mist may still escape to the external environment - for a Chinese family that stir-fries three times a day, it is equivalent to about 120 grams of oil attached to the walls and pipes every month. Long-term accumulation will cause cleaning burdens and even fire hazards.
The ultimate test of Chinese stir-frying: Why is a 90% separation rate not enough?
Laboratory simulations show that when stir-frying peppers, the oil temperature instantly reaches 270°C, and the PM2.5 concentration soars to 800μg/m³ (10 times higher than the national standard). At this time, although the 90% separation rate model can capture most of the large oil droplets, volatile organic compounds (VOCs) with a diameter of less than 0.3μm will still penetrate the filter. What's more serious is that high temperature causes some oil to carbonize and adhere to the fan blades, reducing the life of the equipment.
